Ingredients

  • 2–3 Ripe bananas, mashed

  • 75 g Butter, melted

  • 120 g Sugar

  • 1 large egg

  • 1/2 tsp Baking soda

  • 205 g All-purpose flour

  • 2 tbsp Homemade Mixed Berry compote, for swirling

Directions

  • Preheat your oven to 175°C (347°F). Grease and line a loaf pan with parchment paper to prevent sticking.
  • Mash the bananas until smooth and creamy in a large mixing bowl.
  • Stir in the melted butter, blending well to create a rich, moist base.
  • Whisk in the sugar and egg, ensuring the mixture turns light and smooth.
  • Sprinkle in the baking soda in the flour, stirring just enough to distribute evenly.
  • Gently fold in the flour, mixing only until combined—overmixing will make the bread dense instead of fluffy.
  • Pour the batter into the prepared loaf pan, smoothing out the top.
  • Swirl in the berry compote using a toothpick or knife, creating a beautiful marbled effect.
  • Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
