How to Ripen Bananas:
- Quick Oven Method:Β If your bananas are a little green and you want them to ripen quick, place bananas on a baking sheet and bake at 120ΛC for 15 to 20 minutes depending on the initial ripeness of the bananas.
- 24 Hour Counter Method:Β If you are willing to wait 1 day, you can place the bunch of bananas (without separating them) in a paper bag, cover and leave at room temperature. Bananas emitΒ ethylene which causes ripening.
Storing
Store at room temperature in an airtight container for upto 3 days. Should last for up to 7 days in a refrigerator. You can also freeze the cake wrapped well and in an airtight container for about 2 months.

Ingredients
3 Ripe Bananas, mashed
2 Eggs, at room temperature
190 g Sugar
130 g Oil, any flavourless oil
100 ml Milk + 100 ml Water
185 g All-purpose Flour
50 g Unsweetened Cocoa Powder
1 tsp Baking Powder
50 g Choco Chips, dark
Directions
- Preheat oven to 350 degrees F /180 degrees C (fan based). Butter, or spray with a non stick vegetable spray, a 9 x 5 x 3 inch (23 x 13 x 8 cm) loaf pan. Line the bottom and two sides of the pan with parchment paper.
- In a medium-sized bowl, whisk the eggs and sugar. Then add the mashed bananas and Oil.
- In another large bowl, sieve flour, cocoa powder and baking powder. Add the sieved dry ingredients to the banana mixture in three parts alternating with milk and water mixture, till everything is well combined.
- Pour the batter into the prepared pan. Top with choco chips.
- Bake in the preheated oven until the bread has risen and a wooden toothpick inserted into the center comes out clean, about 35-40 minutes.
- Place on a wire rack to cool for about 15 minutes and then remove the bread from the pan with the help of the parchment paper hanging on the two sides.
