Intensely chocolatey, moist and decadent. Double Chocolate Chip Muffins so easy to make and can be dressed up for halloween!

These double chocolate muffins have been our favourite recipe for a long time. The muffins have a deep chocolate flavour that you’ll absolutely LOVE about them. Dutch processed Cocoa powder and dark chocolate chips are what give them the intense chocolate flavour.

Dress them up for HALLOWEEN!

1. Monster Double Chocolate Chip Muffins

Cute Monster muffins with candy multiple eyes. A perfect Halloween treat!

  • What you need – Candy Monster eyes or white and dark chocolate
  • Once the muffins cool, place googly candy eyes on the the muffins and tadaaa. You can also make monster eyes using melted white chocolate and dark chocolate.

2. Spooky Spiderweb Chocolate Muffins

Another treat for Halloween these Spooky Spiderweb Chocolate Muffins, very easy to make.

What you need

  • 50 g White Marshmallows
  • 50 g Dark chocolate, melted

Place the marshmallows in a microwave safe bowl and heat them for 1 minute. Stir, and if any unmelted marshmallows remain, heat for another 10-20 seconds. Stir well, and let the marshmallows cool until they’re no longer piping hot, but still warm and melted.

Take a big pinch of melted marshmallow between your fingers, and start pulling it apart between your hands, until the marshmallow strand is quite thin. Place it on the muffin, going over and around in different directions. Once that strand is finished, take a second strand and wrap it at a different angle. Continue to pull strands of marshmallow all over the cake until it looks the way you want it to. If at any point the marshmallow gets too thick to pull effectively, and the strands start to snap, heat it briefly until it is workable again.

Make Giant spiders on muffins using the melted chocolate.

Storing

Store the muffins in the refrigerator in an airtight container for upto 7 days.

Ingredients

  • 130 g All-purpose flour

  • 120 g Granulated Sugar

  • 50 g Brown Sugar

  • 60 g Dutch Cocoa Powder

  • ¾ Tsp Baking Soda

  • ½ Tsp Salt, skip if using salted butter

  • 120 ml Buttermilk

  • 85 g Unsalted Butter, melted

  • 10 ml Oil

  • 1 Tsp Instant Coffee + ½c Hot water or ½ cup Fresh Brewed coffee

  • 1 Tsp Vanilla Extract

  • 100 g Chocolate Chips

Directions

  • Preheat the oven to 175C/350F.
  • In a bowl, add the wet ingredients except coffee and hot water. Beat till combined.
  • Now, in another bowl, sift all the dry ingredients.
  • Add the sifted dry ingredients to the wet ingredients. Combine well.
  • Now mix the coffee in hot water and add it to the mixture. Give it a good mix. Add half the chocolate chips into the batter and fold.
  • Line a muffin pan with cupcake liners.
  • Fill the cupcake liners with the batter until 2/3 full. Sprinkle chocolate chips on top.
  • Bake in the preheated oven for 22-25 mins or till a toothpick comes out clean.
  • Let the cakes cool completely.
