This cake is so easy to make and so rich in flavour. The distinct flavour of vanilla, hint of chocolate and a delicious tang from buttermilk give it its unique taste. The cake has a smooth velvety crumb.

No Greek Yogurt?
You can alternatively use hung curd. Just hang homemade curd in a cheese cloth for 3-4 hours to drain the excess water and what you get after 4 hours is thick yogurt.

Eggless Red Velvet Cake

Ingredients
155 g All purpose flour
155 g Greek Yogurt/Hung curd
75 g Caster Sugar
75 g Brown Sugar
20g Cocoa powder
1 tsp Baking soda
1/2 tsp Salt
75 g Unsalted Butter, softened
20 g Oil
25 ml Vinegar
1 tsp Red Colour
20 ml Milk
1 tsp Vanilla Extract
Directions
- Preheat the oven to 175C/350F.
- In a bowl, beat softened butter and sugar well, until fluffy and pale.
- In another bowl, whisk the greek yougurt/hung curd with the baking soda, vanilla extrat, milk and vinegar. The mixture will be slightly bubbly. Add the red colour.
- Add this bubbly mixture to the butter and sugar. Add in the oil and mix well.
- Sift the flour and cocoa powder. Fold into the batter gently.
- Mix till everything is well incorporated and the batter is smooth.
- Grease and dust or line with a loaf pan. Pour the batter into the loaf pan.
- Bake in the preheated oven for 40-45 mins or till a toothpick/knife comes out clean.
