This red velvet cake is eggless and with drizzled white chocolate is surely going to keep you wanting more. Soft melt with a rich flavour. Perfect to accompany your evening coffee or as breakfast. Yes, i eat cake for breakfast sometimes!!

This cake is so easy to make and so rich in flavour. The distinct flavour of vanilla, hint of chocolate and a delicious tang from buttermilk give it its unique taste. The cake has a smooth velvety crumb.

No Greek Yogurt?

You can alternatively use hung curd. Just hang homemade curd in a cheese cloth for 3-4 hours to drain the excess water and what you get after 4 hours is thick yogurt.

Ingredients

  • 155 g All purpose flour

  • 155 g Greek Yogurt/Hung curd

  • 75 g Caster Sugar

  • 75 g Brown Sugar

  • 20g Cocoa powder

  • 1 tsp Baking soda

  • 1/2 tsp Salt

  • 75 g Unsalted Butter, softened

  • 20 g Oil

  • 25 ml Vinegar

  • 1 tsp Red Colour

  • 20 ml Milk

  • 1 tsp Vanilla Extract

Directions

  • Preheat the oven to 175C/350F.
  • In a bowl, beat softened butter and sugar well, until fluffy and pale.
  • In another bowl, whisk the greek yougurt/hung curd with the baking soda, vanilla extrat, milk and vinegar. The mixture will be slightly bubbly. Add the red colour.
  • Add this bubbly mixture to the butter and sugar. Add in the oil and mix well.
  • Sift the flour and cocoa powder. Fold into the batter gently.
  • Mix till everything is well incorporated and the batter is smooth.
  • Grease and dust or line with a loaf pan. Pour the batter into the loaf pan.
  • Bake in the preheated oven for 40-45 mins or till a toothpick/knife comes out clean.

Notes
