How to cook raw Chickpeas for Hummus

Cooking raw chickpeas for homemade hummus is a great way to ensure they’re fresh and perfectly tender. Here’s a step-by-step guide to help you out:

1. Soak the Chickpeas:

  • Overnight Soak: Place the chickpeas in a large bowl and cover them with plenty of water. They will expand, so use at least three times their volume of water. Soak them overnight or for at least 8 hours.
  • Quick Soak: If you’re short on time, place the chickpeas in a pot, cover them with hot water and let them sit, covered, for 1 hour. Drain and rinse.

2. Cook the Chickpeas:

  • Stovetop Method:
    1. Drain and rinse the soaked chickpeas.
    2. Place them in a large pot and cover with fresh water (about 2 inches above the chickpeas).
    3. Bring to a boil over high heat, then reduce the heat to a simmer.
    4. Cook for 45-60 minutes, or until the chickpeas are tender. Stir occasionally and check the texture. Skim off any foam that forms on the surface.
    5. Once cooked, drain and let them cool slightly before using.
  • Pressure Cooker/Instant Pot Method:
    1. Drain and rinse the soaked chickpeas.
    2. Place them in the pressure cooker or Instant Pot with enough water to cover them (about 2 inches above the chickpeas).
    3. Cook under high pressure for 15-20 minutes (adjust time depending on your appliance and preferred texture).
    4. Allow for natural pressure release or quick release, depending on your time constraints.
    5. Drain and let cool.

What to Serve with Homemade Hummus

Hummus is incredibly versatile and pairs well with a variety of foods. Here are some ideas:

  • Vegetables: Carrot sticks, cucumber slices, bell peppers, cherry tomatoes, and celery make for healthy dippers.
  • Bread: Serve with pita bread, naan, or crispy flatbreads.
  • Chips: Tortilla chips, pita chips, or even vegetable chips are great for scooping up hummus.
  • Salads: Use hummus as a salad dressing base or as a topping for a Mediterranean-inspired salad.
  • Sandwiches & Wraps: Spread hummus on sandwiches or wraps for an extra layer of flavor.

Hummus Variations

The classic hummus recipe is a blank canvas for creativity. Here are some tasty variations to try:

  1. Roasted Red Pepper Hummus: Add roasted red peppers for a sweet and smoky flavor.
  2. Garlic Hummus: Increase the garlic to 4-5 cloves for a robust, garlicky kick.
  3. Spicy Hummus: Blend in a small chili or some cayenne pepper for a fiery twist.
  4. Herbed Hummus: Add fresh herbs like parsley, cilantro, or basil for a bright and fresh flavor.
  5. Beet Hummus: Add roasted beets to create a vibrant, pink hummus with an earthy taste.

Storing Homemade Hummus

Homemade Hummus is best stored in an airtight container in the refrigerator. It will stay fresh for up to a week. If you notice any separation, simply stir it well before serving. For longer storage, you can freeze hummus. It may lose a bit of its creamy texture upon thawing, but a quick stir or additional blend will bring it back to life.
