400 g Fresh Strawberries, Sliced
150 g Sugar
1 tbsp Lemon juice

- Prepare the Strawberries
- Wash the strawberries thoroughly under cold running water. Remove the green tops and dice them into small chunks if you prefer a smoother compote, or halve/slice them for a chunkier texture.
- Cook the Compote
- Place the strawberries and sugar in a medium-sized saucepan over medium heat.
- Stir occasionally as the sugar dissolves and the strawberries release their juices. This should take about 5-7 minutes.
- Continue cooking for another 5-8 minutes, stirring frequently, until the mixture thickens slightly. Once thick, add lemon juice and let the compote cool.
- Adjust the Consistency
- If you like a smoother compote, use a potato masher or a fork to mash the strawberries to your desired consistency. For a chunkier texture, let the pieces remain intact.
- Cool and Store
- Allow the compote to cool completely before transferring it to a clean, sterilized jar.
