Ways to Use Mixed Berry Compote

  1. Pancakes & Waffles: Drizzle the compote generously over pancakes or waffles for a fruity topping.
  2. Yogurt Parfaits: Layer the compote with creamy yogurt and granola for a quick and healthy breakfast.
  3. Ice Cream Topping: Spoon it over vanilla or cheesecake ice cream for a refreshing twist.
  4. Cheesecake or Pies: Use it as a topping for cheesecakes, or swirl it into pie fillings for extra flavour.
  5. Toast: Spread it over buttered toast for a simple yet indulgent treat.
  6. Cocktails: Add a spoonful to sparkling water or cocktails for a fruity touch.

Tips for the Perfect Compote

  1. Balance the Sweetness: Adjust the sugar based on the natural sweetness of the berries you’re using. Taste as you cook to find the right balance.
  2. Preserve Texture: Mash the berries lightly to keep the mixture chunky. Avoid over-mixing or pureeing.
  3. Enhance Flavour: Add a splash of vanilla extract or a pinch of cinnamon for a warm, aromatic twist.
  4. Control Consistency: Simmer longer for a thicker compote or add a tablespoon of water for a thinner texture.
  5. Seasonal Variations: Experiment with seasonal berries or mix in a few dried fruits for added depth.

Ingredients

  • 120 g Blueberries

  • 360 g Strawberries, hulled and halved

  • 150 g Sugar

  • 1 tbsp Lemon Juice

  • 1/2 tsp Lemon Zest

Directions

  • Wash the blueberries and strawberries thoroughly. If using raspberries or blackberries, rinse them gently to avoid bruising.
  • In a medium saucepan, combine the blueberries, strawberries, sugar, lemon juice, and lemon zest. If you’re using raspberries or blackberries, add them at this stage too.
  • Heat the mixture over medium heat, stirring occasionally about 5 minutes. As the berries cook, they’ll release their juices, creating a syrupy base. Use a spoon to lightly mash some of the strawberries to enhance the chunky texture while keeping other pieces whole for a satisfying bite.
  • Let the compote simmer for 12-15 minutes, or until the mixture thickens slightly. If you prefer a thicker texture, cook for an additional 2-3 minutes. Remove from heat and allow it to cool slightly.

Notes

  • Mash the berries lightly to keep the mixture chunky. Avoid over-mixing or pureeing.
  • Simmer longer for a thicker compote or add a tablespoon of water for a thinner texture.
