Blondies and brownies differ mainly in flavour and color. While blondies have a caramel, vanilla taste from white chocolate, brownies are rich and chocolatey from cocoa or milk and dark chocolate. Blondies are golden and often sweeter, whereas brownies are darker and denser. Think of blondies as the “vanilla cousin” of chocolatey brownies!

Tips to melt White Chocolate

When making Nutty Orange Blondies, take extra care while melting the white chocolate, as it can easily scorch if overheated unlike the milk or dark chocolate. White chocolate is especially delicate, so if you’re using a microwave, melt it in short 15-30 second bursts, stirring in between each interval until smooth. If you prefer, you can use a double boiler by placing a heatproof bowl over a pot of simmering water, making sure the bowl doesn’t touch the water. Ingredients

  • 225 g White chocolate, melted

  • 115 g Salted Butter, melted

  • 100 g Sugar

  • 2 large Eggs

  • 1 tsp Vanilla extract

  • 2 tbsp Orange rind (I soaked mine in a little rum for extra flavor, but feel free to use fresh rind if you prefer)

  • 50g Almonds, chopped

  • 130g All-Purpose flour

Directions

  • Preheat your oven to 170Β°C (350Β°F). Line a 7Γ—7-inch baking pan with parchment paper to make it easier to lift the blondies out once they’re done.
  • In a large mixing bowl, combine the melted white chocolate and butter until you have a smooth, glossy mixture. You can also melt them together in the microwave in 30 second bursts or over a double boiler.
  • Add in the sugar, eggs, and vanilla extract, stirring until the mixture is nice and smooth.
  • Now, add the dry ingredients. Gently fold in the flour, rum-soaked orange rind, and chopped almonds. Be careful not to over-mix at this stage; just combine until you no longer see any streaks of flour.
  • Pour the batter into your prepared pan and smooth it out with a spatula. Bake for 20-25 minutes or until the top looks set and golden but still has a slight jiggle in the center. Remember, these blondies will continue to set as they cool, so try not to overbake.
  • Once baked, let the blondies cool in the pan before slicing them into 9 squares.
