Ingredients
1/4 cup (60 g) Yogurt / Thick Curd
1/4 tsp Baking Soda
3/4 cup (93 g) Whole Wheat Flour
1 tbsp Cocoa Powder
1/2 tsp Baking Powder
8 tbsp Jaggery Powder
1/4 cup (60 ml) Any Flavourless Oil
1/4 tsp Vanilla Extract
5 tbsp Whole Milk
1 tsp Coffee + 1 tsp Warm Water
10-15 Almonds, chopped
- Ganache (Optional)
50 g Dark Chocolate sweetened
20 g Heavy Cream
5-6 Chopped Almonds
Directions
- Preheat oven to 175C/350F
- In a bowl, whisk yogurt/hung curd with the baking soda and set aside. The mixture will be slightly bubbly.
- To the bubbly mixture add Jaggery and oil. Mix well.
- Sift whole wheat flour, cocoa powder and baking powder. Add it to the prepared mixture in 2 batches alternating with milk. Mix well till smooth. Fold in the chopped almonds.
- Grease a 4 inch spring foam pan. Pour the batter into the cake pan.
- Bake in the preheated oven for 35-40 mins or till a toothpick/knife comes out clean.
- Ganache Topping (Optional)
- Heat up heavy cream in a small pan and pour over chopped chocolate chunks.
- Mix well till you get a smooth ganache. Pour over the cake and top with chopped almonds.
Notes
- No thick curd?Β You can hang homemade curd in a cheese cloth for 3-4 hours to drain the excess water.
